The evergreen or deciduous leaves (depending on climate) are highly nutritious, are soft in texture, and have a taste somewhere between lettuce and spinach. They make a good base for any green leaf salad. The leaves can also be dried (avoid direct sunlight when drying them) and used in soups and sauces. The powdered form is the best way to store Moringa leaves.
